Raspberry Chipotle Pepper Jelly, is an interesting combination of flavors. The tartness of the raspberries plays interestingly with the smoky heat of the chipotle peppers in adobe sauce. Add in just the right amount of sweetness from the sugar, and it transforms raspberry jelly.
It is a strange and wonderful feeling to see your creations come to fruition. Yo Momma has worked hard to build her brand, her image, her business. It has been a joy, sometimes painful, and sometime very rewarding. After so many years of working in the corporate world of healthcare, it is refreshing to start anew. But I will say this, I’ve learned a lot of things over the years. The most important is to learn how to work with your partners.
This fine gentlemen is the owner of my co-packer here in North Carolina, Jack Pyritz. Great guy, really willing to work with me. That’s important! He has sat down with me on several occasions, and talked with about his limitations on productions. As I have shared the steps that is needed to produce my jams and jellies. His company has never made products like mine, so it is like we are holding each others hand working through the issues.
Take for instance today, we were suppose to be making my Raspberry Chipotle Pepper JELLY. Well somehow the recipe got lost in translation. They used frozen raspberries to make the base, where as I just wanted the juice from the berries. They don’t have that capability, so for my for my first tasting.. I got my Raspberry Chipotle Pepper Jelly. BUT it had the seeds still there, which I didn’t want. It is still technically a jelly because there aren’t any fruit pieces, it’s just they didn’t know the difference between jam, jelly, and preserves.
So now i have a seeded jelly, and actually I like the flavor better. Why you may ask? Because they pureed the chipotle peppers in adobe sauce. It actually makes it taste more composed, it mellows the heat of the peppers. Who knew LOL! Thursday Help Hint Day: Puree your chipotle peppers before adding to your raspberry JELLY:-)
