Green Chile made with roasted Anaheim chiles, onions, tomatoes, and roasted garlic is an amazing combination of flavors. There are a variety of methods to make Southwestern Green Chile, this just happens to be the way that I have always made the stuff. Some cooks just just make a sauce with onions, garlic and chiles flavored with some cumin, while other add some pork to the pot. Now mine is more like a Colorado Style Green Chile with the addition of tomatoes. No matter how you make it Green Chile embodies everything Southwestern, and you find it in Mexican restaurants throughout the area. It can be eaten as a stew, but typically Green Chile is used as a condiment. You ladle it over burritos, chimichangas, tamales, or make Huevos Ranchero, and actually the correct term is called SMOTHERED Burrito. It is typically always served warm with tortillas, unlike salsa which is served cold with tortilla chips.
When I moved to North Carolina I was astounded that nobody from the South knew about roasting green chiles. Every fall in the Southwest during chile season you see produce stands everywhere roasting chiles by the bushels for people. OMG the smell of roasted chiles is heavenly, you can smell it from miles away. You have to roast them to char them, then once cooled you remove the skins. Typically I use Poblanos for stuffing, Anaheims and Big Jims for salsa and my Colorado Style Green Chile. This is what the roasters look like, and are propane fired just like a barbecue grill.
