Biscuits, oatmeal, and apple butter sounds like a strange combination to most people, but that’s what I brought up to Louisburg today. Today was my first production run of my Apple, Date, and Walnut Butter with my co-packers atĀ http://www.bobbeesbottling.com/, really nice people to work with!
For those not familiar with the term, a co-packer is a company that utilizes my recipes, manufactures and packagesĀ them on a much larger scale than I could. They source all the ingredients for me, do all the cooking, bottle it up, and apply the labels SO NICE! Bobbee’s has been in business for over 20 years, and have thousands of customers. THEY know their business, but just not my business LOL!
It’s a learning process for both of us, for sure. When I make my products I know what I’m aiming for in the final product, but to turn it into large scale production I have to learn their processes. So together we taste my samples I bring from home, start cooking, taste, adjust, cook some more, taste again until we get to correct profile. They have been very patient with me, as I have with them at times. For those that know me: patience is not one of my virtues, and I am the first to admit it.
The one virtue I do possess is the ability to talk to anyone and everyone. I love to interact with people. Take for example Mr. P, as every calls him at Bobbee’s. Nicest man you could ever meet, salt of the earth! First thing he said to me this morning when he saw me was, “sorry I missed you on my birthday!” That just tickled me pink!! I asked him when it was and he told me it was March 10th, and that he turned 84 this year. I told him I was sorry I missed it, but that I brought him a belated present. A nice bowl of warm oatmeal, because I remembered the last time we talked he told me how much he loved oatmeal. We had lunch together, talked, laughed, and he shared a memory of his mother’s salad dressing. I jogged his brain for the ingredients. So next week when I head up to roll out my Bacon and Fig Jam, I’m going to bring some homemade Mr. P dressing. Yo Momma is going to recreate it, and we will make it taste just like his mom’s together. Silly, I know, but I like the ingredients hee-hee!
Mr. P is the father of the owner of Bobbee’s, and helps his son out all the time. Isn’t that the way families should always be… so says Yo Momma!
